Sunday morning is perfect for late brunch. Late brunch gives enough time to put things in order, do a little shopping, even go to church, and still have a friend over for a long-awaited catch-up, some mimosas, and fruity, syrupy, pancaky brunch.
Everything can be made as you chat, which makes it much less stressful if you're the kind of person who likes to chat and cook. Fruit could also be cut and chilled before to save time if you're THAT kind of person.
On the menu this morning... fruit
salad (watermellon, blueberries, grapes); strawberries with balsamic
over buttermilk pancakes; blueberry beef breakfast sausage from the
farmer's market; maple syrup to drench it all; mimosas, courtesy of
my lovely guest.
Nigella's Easy Strawberries from How to Eat
Cut up strawberries, sprinkle sugar over, and then pour a little balsamic vinegar over that. Stir and then let sit for a bit.
Buttermilk Pancakes from Better Homes and Gardens
1 cup flour
1 tablespoon sugar
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
1 beaten egg
1 cup buttermilk or sour milk
(I used ½ cup sour whipping cream and ¾ cup skim milk)
2 tbsp cooking oil
Combine dry ingredients. Then combine wet ingredients. Make a well in the centre of the dry ingredients and and egg mixture. Stir until just moistened and add additional milk to thin the batter, if necessary.
Use a ¼ cup measuring cup to spoon the batter into the pan; this gives you just enough for a standard sized pancake. Cook over medium heat.
